  • 1/2 tsp Turmeric Powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon Red Chili Powder
  • 1/4 cup Tamarind Water (Note 2)
  • 1 cup coconut milk, thin
  • 1/2 cup thick coconut milk
  • 7-8 Curry Leaves
  • Season with salt to taste

Instructions

  • Heat the coconut oil in a large pan and add the mustard seeds, cardamom, peppercorns, cinnamon, and green chilies. When everything begins to sputter, add the ginger, garlic, and onions.
  • Cook until the onions are soft and translucent, then add the tomatoes, turmeric, coriander, chili powder, and salt.
  • Cook the tomatoes for 6-8 minutes, or until they are pulpy.
  • Thin the coconut milk with tamarind water.
  • Bring this to a boil, then reduce to a simmer.
  • Simmer for 5 minutes, or until the gravy has reduced slightly and thickened. If necessary, add some water at this point to alter the consistency.
  • Season to taste, then add the curry leaves and thick coconut milk. Stir a few times without allowing it to come to a boil, then turn off the heat. Place the eggs in the curry, cover, and set aside for 5 minutes before serving.

  • Once the tomatoes, as well as onions, have softened, stir in the salt, turmeric, and chili powder.
  • Cook for 5-6 minutes before turning off the heat.
  • Cool it before transferring it to a blender with 3/4 cup of water. It should be blended.
