Instructions

  • Bring a pot of water to a boil with 1/4 teaspoon salt for your pasta.
  • Brown the ground pork in a dutch oven over medium heat, breaking it up with a spatula as it cooks, for about 7 minutes.
  • Combine the mushrooms, crushed red pepper, garlic, and 1 teaspoon of salt in a mixing bowl. Cook, stirring occasionally, for 5 minutes, or until mushrooms are browned.
  • Stir in the butter until that is melted, then add the flour and mix thoroughly. Stir in the milk slowly and bring to a boil whilst also stirring. Reduce heat to low and cook for 10 minutes, stirring frequently.

  • Allow the red wine to deglaze the pan for 2-3 minutes, or till the liquid has lowered by half. Season with salt and pepper after adding the stock and tomatoes. Reduce the heat to low and lightly simmer for 45 mins to an hour, or until thick and rich. Stir in the butter and half of the basil.
  • Meanwhile, in a large mixing bowl, combine the flour and semolina. Create a well in the center. Add water gradually, stirring with a fork to bring the flour into the center until a rough dough forms. Knead the dough until smooth on a floured surface. Roll out 10-cent coin-sized pieces of dough into thin sausage shapes.
  • Place your fingers all along the top of each sausage, then drag it down and more towards you to create a curled shape, working with one piece at a time.   Place the shaped pasta on a dusted surface and repeat with the remaining dough.
  • Bring a large pot of water to a boil. Cook for 3-4 minutes, or until pasta is al dente. Transfer the pasta to the sauce, adding a little of the pasta water to achieve the desired consistency.
  • Serve the pasta with the pecorino and the remaining basil leaves on top.
