- 1 pound of rigatoni
- 1 pound pork ground
- 1 pound sliced white button mushrooms
- 4 peeled and minced garlic cloves
- 1/2 teaspoon red pepper flakes
- pepper and salt
- 2 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 quarts of whole milk
- 1/2 cup parsley, freshly chopped
- Bring a pot of water to a boil with 1/4 teaspoon salt for your pasta.
- Brown the ground pork in a dutch oven over medium heat, breaking it up with a spatula as it cooks, for about 7 minutes.
- Combine the mushrooms, crushed red pepper, garlic, and 1 teaspoon of salt in a mixing bowl. Cook, stirring occasionally, for 5 minutes, or until mushrooms are browned.
- Stir in the butter until that is melted, then add the flour and mix thoroughly. Stir in the milk slowly and bring to a boil whilst also stirring. Reduce heat to low and cook for 10 minutes, stirring frequently.
- Cook the pasta according to package instructions while the sauce simmers. Drain the pasta.
- Stir in the rigatoni as well as parsley until well combined. Season to taste with salt and pepper.

- Set aside a mug of pasta water, then drain the pasta and add it to the pot with the pork. Cook for another couple of minutes till the spinach has wilted, then add 250ml of pasta water, the spinach, and the parmesan.

Instant Pot Ground Pork and Pasta

- 1/4 cup creamy peanut butter
- 2 tbsp of soy sauce
- 2 tbsp sambal oelek (chile paste) 12 tbsp Worcestershire sauce
- 1/2 teaspoon balsamic vinegar
- 1 tbsp packed dark brown sugar
- 2 tbsp of peanut oil
- 1 pound lean ground pork
- 1 chopped yellow onion
- 2 celery stalks, chopped 1 tablespoon minced fresh ginger

- 2 cup chicken stock

- 1/4 cup extra virgin olive oil
- 1 large finely diced brown onion
- 3 garlic cloves, finely sliced
- 1 tablespoon fennel seeds
- 1/4 cup red wine, dry
- 1/2 tablespoons chili flakes
- 500g minced pork
- 500ml chicken broth
- 2 tins of chopped tomatoes (400g)
- 1/2 bunch basil, picked leaves
- a pinch of salt and freshly cracked pepper
- 80g of butter
- 75g grated pecorino cheese
- 200g plain flour plus additional for dusting
- 200g semolina fine
- 180 mL of warm water
- Heat the oil in a large heavy-bottomed or cast-iron saucepan over medium heat to make the ragu. Cook for 4-5 minutes, or until the onion is softened and golden. Cook for another 2-3 minutes, or until the garlic, fennel seeds, and chili flakes are fragrant. Cook for 4-5 minutes, or until the pork mince is browned, breaking up any lumps with a wooden spoon.
- Allow the red wine to deglaze the pan for 2-3 minutes, or till the liquid has lowered by half. Season with salt and pepper after adding the stock and tomatoes. Reduce the heat to low and lightly simmer for 45 mins to an hour, or until thick and rich. Stir in the butter and half of the basil.
- Meanwhile, in a large mixing bowl, combine the flour and semolina. Create a well in the center. Add water gradually, stirring with a fork to bring the flour into the center until a rough dough forms. Knead the dough until smooth on a floured surface. Roll out 10-cent coin-sized pieces of dough into thin sausage shapes.
- Place your fingers all along the top of each sausage, then drag it down and more towards you to create a curled shape, working with one piece at a time. Place the shaped pasta on a dusted surface and repeat with the remaining dough.
- Bring a large pot of water to a boil. Cook for 3-4 minutes, or until pasta is al dente. Transfer the pasta to the sauce, adding a little of the pasta water to achieve the desired consistency.
- Serve the pasta with the pecorino and the remaining basil leaves on top.
